I have been eating eggs like crazy. They are quick and nutritious and full of the
protein I need as a person still eating for 2. Lately my go to prep is to toss in some fresh herbs, cherry or grape
tomatoes, and a little goat cheese at the last minute, then serve over a bed of arugula.
Yum.

ReplyDeleteYou're not alone!. My favourite afternoon snack is a hard boiled egg. I peel it then just chomp into it - my husband gives me very weird looks.

ReplyDeleteyum that looks so delicious! i mash boiled eggs and add s&p and olive oil and eat it like chicken salad, people think im so weird!

nursing mamas need so many eggs! i have 3 a morning, scrambled with half an avocado and some salsa. yum.
