I am totally obsessed with this dish.
It might have a lot to do with the insanely orange eggs purchased from the office botanist, but whatever it is, I can't get enough.
At least once a week we have the simple meal of brown rice & steamed veggies. (Poor Ben.) A few days later I will scramble a few eggs, then throw in the left over veggies and rice at the last minute to heat up. Then I put the combo over a bed of spring mix, top with green onions (if we have them) and season with Braggs.
It is so good.

ReplyDeleteWe have chickens (who also lay insanely orange eggs). This is one of my favorite things to do with them too. I mix mine into more of a fried rice situation though.

ReplyDeleteAnd that's very Italian countryside of you, mixing last night's dinner into a hot pan of golden-yolked scrambled eggs. SO delicious. Peter and I do some version of leftover veggies + egg pretty much every Sunday morning for brunch, but my pictures never make it look as good as that!

ReplyDeleteoohh, to everyone who's never had Braggs: go to your store and get some now! it's a bit like soy sauce, but better, and it's filled with amino acids and all other sorts of goodness! best thing ever.
